Cream of Broccoli Soup

Rich and Creamy Dairy Free Raw Vegan Soup.

Ingredients

Veggies

  • 4 cups broccoli chopped
  • 1 cup mushrooms sliced
  • 1/2 cup red onions sliced
  • 1/4 cup celery diced
  • 1 Tablespoon extra virgin olive oil
  • 1 Tablespoon lemon juice
  • 1/2 teaspoon sea salt

Creamy Base

  • 2 cups cashew soaked for at least an hour
  • 2 cups water warm and filtered
  • 2 Tablespoons Bragg's liquid amino
  • 1/2 cup nutritional yeast
  • 1 teaspoon granulated garlic
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1 teaspoons sea salt

Instructions

  1. Place all ingredients in a bowl and marinate in the olive oil, lemon juice, and sea salt.
  2. Soften in dehydrator for about 20 minutes on 110 degrees. (optional)

For the Cream Base

  1. Place all ingredients for the cream base in the food processor and blend until smooth and creamy with the s-blade or in a blender.
  2. Add marinated vegetables to the base and enjoy.
