Carrot Tuna
Use the pulp from juicing to make this delectable carrot salad.

Ingredients
- 2 cups carrot juice pulp medium sized
- 1/4 cup vegan mayonaise like veganaise
- 1/4 cup sweet relish
- 2 Tablespoons sweet yellow onion diced
- 2 Tablespoons green pepper diced
- 2 Tablespoons celery fresh celery diced
- 1/2 teaspoon granulated garlic
- 1/2 teaspoon celery salt
- 1/2 teaspoon granulated kelp
Instructions
- Juice about 7 or 8 medium carrots, Drink the Carrot juice and use the pulp for the carrot tuna salad. Add all other ingredients to the carrot pulp in a bowl and mix well.
- Serve on lettuce, bread or toast.
