Ingredients

  • 1 cup almonds chopped
  • 1 1/2 cup medjool dates pitted and soaked overnight with enough filtered water to cover the top
  • 1 teaspoon vanilla extract or 1 vanilla bean
  • 1/4 teaspoon sea salt
  • 1 lemon zest
  • 2 Tablespoons lemon juice
  • 1 cup coconut shredded

Instructions

  1. In food processor, chop almonds into small pieces.

  2. Add remaining ingredient to food processor and mix.

  3. Press mixture into a square container chill for a couple of hours until firm and cut into bars.
