Cheezy Macaroni Casserole

Ingredients

  • 4 cups macaroni noodles cooked whole wheat or gluten-free
  • 2 carrots large, halved and thinly sliced
  • 1 cup green peas
  • 2 cups broccoli florets

Cheeze Sauce

  • 1 cup milk unsweetened soy, cashew, or almond
  • ½ cup white potatoes cooked
  • ½ cup sweet potatoes cooked
  • ½ cup nutritional yeast
  • ½ cup cashews soaked for at least an hour
  • 4 whole garlic cloves
  • ¼ cup oil grapeseed or olive oil
  • 1 Tablespoon lemon juice
  • 2 Tablespoons wheat free tamari
  • 1 Tablespoon granulated garlic powder
  • 1 Tablespoon paprika
  • 1 Tablespoon sea salt

Instructions

  1. Preheat oven to 400 degrees.

  2. Mix cooked noodles, carrots, peas, broccoli in a large bowl with ½ of the cheeze sauce mixture.

  3. Add mixture to a casserole pan and use the rest of the cheeze sauce on top.

  4. Sprinkle paprika on top for browning and bake uncovered for about 25 minutes. 

Cheeze Sauce

  1. Add all ingredients to a high speed blender and blend unFl smooth.
