Ingredients

  • 2 beets large shredded
  • ¼ inch ginger peeled and minced
  • ¼ cup lemon juice
  • ¼ cup date paste or syrup

Date Paste

  • 2 cups Medjool dates
  • 3 cups water soak overnight with enough filtered water to cover the top

Instructions

Date Paste

  1. Make a date paste by either mashing the soaked dates with a fork with soak liquid or put them in a blender with soak liquid and blend. (If you are going to use a blender than you only need to soak the dates for about an hour.)
  2. The paste can last up to a week or two in the refrigerator.

Ginger Beets

  1. Mix all ingredients in a bowl mix well and let sit for about 30 minutes to allow the flavors to set in.
