Ingredients

  • 1 plantain ripe thinly sliced
  • 3 Tablespoons sun dried tomatoes soaked and sliced
  • 1 teaspoon lemon juice or lime juice
  • 1 teaspoon extra virgin olive oil
  • 2 Tablespoons parsley fresh parsley chopped
  • 1/2 teaspoon thyme leaves fresh thyme chopped
  • 2 Tablespoons scallions chopped
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon sea salt

Instructions
