- 7 carrots medium sized
- 1/3 cup coconut cream full fat
- 3 Tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon nutmeg
Juice carrots using a juice extractor or blend with 2 cups of water and strain the pulp.
Use a mesh strainer or cheesecloth to get rid of any extra pulp.
In a high speed blender add juice from carrots, coconut cream, maple syrup, vanilla and nutmeg and blend with a few cubes of ice.
