Caribbean Carrot Juice Punch

Ingredients

  • 7 carrots medium sized
  • 1/3 cup coconut cream full fat
  • 3 Tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon nutmeg

Instructions

  1. Juice carrots using a juice extractor or blend with 2 cups of water and strain the pulp.
  2. Use a mesh strainer or cheesecloth to get rid of any extra pulp.
  3. In a high speed blender add juice from carrots, coconut cream, maple syrup, vanilla and nutmeg and blend with a few cubes of ice.
