My classic Creamy Marinated Kale Recipe.

Ingredients

  • 1 kale greens 1 bunch
  • 1/4 cup red onions diced
  • 1/4 cup red peppers diced
  • 1/4 cup yellow peppers diced
  • 1 avocado
  • 1/4 cup extra virgin olive oil
  • 2 Tablespoons lemon juice
  • 2 Tablespoons apple cider vinegar
  • 1 teaspoon cumin
  • 1 teaspoon granulated garlic
  • 1 teaspoon sea salt

Instructions

  1. Separate greens from stem and wash them thoroughly.
  2. Ribbon slice kale with a sharp knife or run the kale through the food processor using the slicing blade.
  3. Add all ingredients to a bowl and mash the avocado with the kale.
  4. Mix all ingredients thoroughly.
